Dhaga Mishri (500g) Ayurvedic Rock Sugar
Rock Sugar or Mishri as a crystallized unrefined form of sugar. Dhaga means string and it does have a string through it for starter crystal "seeds" to grab onto to begin crystallization. Milk is also used in the centuries old, slow process of crystallization which is why it is grey or cloudy in color.
Mishri, or rock sugar, is made from the solution of sugarcane and the sap of the palm tree. This palm sugar is loaded with a number of nutrients such as essential vitamins, minerals and amino acids. Vitamin B12, more difficult to obtain in a vegetarian diet, and it is also found in mishri. Mishri is not just a healthier substitute to table sugar but has some health benefits, too, which you can find on the internet.
I use it in cooking or when making chai all the time. Especially used in the summer as it has a cooling & calming effect on the body.
(Winter months we use jaggery for sweetening which has a warming effect on the body. For this reason, Dhaga Mishri is often not available in winter, colder months.)
